Castello di Medelana

From 1986-1995 I was a co-owner of this cooperatively run farm and restaurant project. Located in the hills between Florence and Bologna, the restaurant was popular March through December.I was the pastry chef, as well as being part of the agricultaral team. I was in charge of the fruit orchards. From 1990-1995, I worked half the year there, and half in the U.S. In 1996, the restaurant was moved to a medieval fortress village ten miles south of Bologna.
